Santa Irene, Guatemala
Regular price £12.00Santa Irene is a protected natural forest reserve extending 129 hectares owned by Dr. Jacinto Estrada Zanabria. In 2012, Carlos Estrada, Dr Jacinto’s son, started working 15 hectares of this land. He started with a few coffee plants, and by 2013 planted the entire 15 hectares.
Carlos is extremely passionate about specialty coffee. He loves experimenting with different processes, including anaerobic, and recently invested in a glass green house to dry his coffee. Carlos has a real excitement for quality and is open to challenging the norms to find ways to produce better. The Cobán region is similar to life in England, with its constant rainfall, dense clouds and coolness. However, it also has luscious green rolling hills. It has a unique climate compared to other coffee regions. Instead of a dry and rainy season, Cobán benefits from a mist and rainy season. Its unique rainforest and tropical climate is influenced by its proximity to the Atlantic Ocean and as such a different style of farm management needs to be implemented to keep leaf rust at bay.
The rainfall in Cobán is distinct as it’s a fine mist - and it’s known across the country as “chipi-chipi”. On average, this chipi-chipi falls nine to ten months of the year, resulting in a very staggered flowering season. Most of the crops grown in this region are shade grown, and cultivated by small producers. Due to the climate and other varying conditions, coffee here is very different from other Guatemalan coffees. It has a good body, a recognisable and delicate acidity, and amfragrant aroma.
Expect tasting notes of hazelnuts, raspberries, dark chocolate.
