This is a UK-exclusive very special release, sourced in collaboration with Batch Baby to celebrate their third birthday.

Café Uba is the brainchild of third-generation coffee producer, Julio Madrid, who is driven by a deep passion for the quality, distinct flavours, and aromas of specialty coffee. They have three coffee farms, totaling more than 200 hectares with around one million coffee trees and with more than 20 different varieties of coffee.

Coffee farming in Dosquebradas, Risaralda sits in the ridge of the central mountain range of the Andes with high influence of the snow-capped Santa Isabel and Nevado del Ruiz. The soil is rich in organic matter and coupled with plenty of sunlight and a good amount of rain, as well as a wide temperature range where you see up to 30C during the day and around 15C at night, coffees from this region develop complex and unique flavours.

For more than three years the team at Café Uba has been working on co-fermenting coffee with tropical fruit. This particular coffee is produced using the watermelon co-fermented nitro anaerobic natural processing method. Here the coffee is added to a bioreactor with fermented watermelon and a microbial starter culture which is then flushed with nitrogen to remove the oxygen. It ferments until it reaches the right temperature, fermentation activity and pH level. Once it’s done, it’ll be transferred to drying beds and then a mechanical dryer to reduce the humidity further.

This kind of processing is so new and unique that Universidad de los Andes has carried out research of Café Uba’s coffees. This research looked at the characteristics of fermented coffee which has had a microbial starter culture added. Coffee from Café Uba has been used by the winners of the World Barista Championships over the last few years and is truly a world-class producer.
